“Portuguese style” Pork Meat with Rosemary Potatoes

Serves: 4 people
Ingredients
For the potatoes:
- 4 potatoes;
- 2 cloves of garlic;
- 3 table spoon of olive oil;
- black pepper as per taste;
- sea salt as per taste;
- 2 table spoon of rosemary leaves.
For the meat:
- 500gr of pork meat (from the shoulder);
- 1 table spoon of red pepper paste;
- 3 table spoon of garlic paste;
- olive oil to sauté.
Method
For the Potatoes:
Boil the potatoes with its skin. After that, cut them in 4 chunks and display in a tray to take to the oven.
Sprinkle the sea salt, pepper, the rosemary leaves and the olive oil (be generous!).
At the end sprinkle the minced garlic and put into the oven at 350ºF, for around 20/30 minutes.
When the garlic becomes golden brown it is ready.
For the Meat:
Prepare the meat, cutting in bite sizes.
Use your hands to season it with the paste of garlic and the paste of red sweet pepper (massa de pimentão doce).
If possible let it at least one hour marinating.
Prepare a frying pan with olive oil, and simmer the meat in medium low heat.
If you want, add some drops of white wine when frying.
Spread the meat over the potatoes and take it to the table.
