Rice Pudding

In Portuguese: Arroz doce
Cooking Time: 1 hour


  • 500 gr of rice
  • 3 lt of milk
  • 1 kg of sugar
  • 4 egg yolks
  • 3 orange peels
  • 3 lemon peels
  • Salt as per taste
  • Margarine as per taste
  • Cinnamon powder


Add in a large pan a short quantity of water, the salt, the margarine and the orange and lemon peels , and let it boil;
Add the rice and stir;
Let the rice “open” and set the stove to the minimum;
Boil the milk in a separate pan;
Stir egg yolks with 3 or 4 tablespoons of sugar;
When the rice is “open” add the boiling milk;
Cover the pan and let it cook very well (30 to 45 minutes);
Add 1/2 kg of sugar;
Add the egg yolks by passing them through a strainer;
Add more sugar if necessary.

Serve in small bowls.
Garnish with cinnamon powder
